as the title says what are they?
currently I have a few options:
scimitar
rapier
battle axes
mauls
I like the mauls for the 10d base damage and I like the scimitars for crits and I don't like rapiers and the battle axes combine a relatively higher base attack with a bit higher crit multiplier so they are cool too

mauls are 2 handed
scimmies and rapiers are the 2 best in your list which depends on your race elf for scimmies , drow for rapiers. simply for their threat range. If you are a dwarf then its dwarven axes.
for everyone it is kopesh, but you have to eat the exotic feat
if you want to go finesse , it has to be rapiers.

well, mauls are twohandweapons...
battle axes suck because of the bad crit range
depending on class and race i'd say
elf
scimitar/longsword/kopesh
drow or dex gimps
rapier
dwarf full bab class splash
dwarfen Axe/kopesh
other races
kopesh (needs a feat)
if you wanna be a full time stunner warhammers are cool

You forgot heavy picks. Picks are the only weapons with x4 crit multiplier. Particularly nice for a TWF barb: FB II & III boost crit multiplier on 19 or 20 roll.
IMHO, the main reason to go with mauls or warhammers is if you like Stunning Blow and want to use Stunning weapons to boost your DCs.

Not really. Undead are more at mid-levels. Endgame is all about devils. Normal devils have no fort, and bosses have 50% fort. There are some epics with undead, but most epics don't have fort at all.
Heavy Picks are a decent choice. They are the same average damage as Rapiers, but the do a lot more vs. stunned and held mobs, which is a big tactic in epics.

From your choices (Leveling up) Scimitars or Rapiers.
For Epic I'd try to switch to picks.

tbh I like Kukri's, they have a low normal damage output but they have a high critical threats.

They're among the best light weapons for offhand (along with Light Picks), but not an ideal choice for main hand weapon. They're still better than Long Swords, Bastard Swords and Battle Axes, though. At higher level, wielding light weapons in offhand is generally unnecessary, even without OTWF.

Its technically true. Dual-wielding Falchions would be the best martial DPS in game, unless maybe you're a dorf.

Generally, the best 1-handed weapon is the khopesh, for the combination of x3 critical multiplier and the wide critical range, but it needs a feat.
After that, the best would be rapiers/scimitars/heavy picks, again for overall critical damage. Rapiers and Scimitars are x2, with a base critical range of 3; picks are x4 with a base crit range of 1, which amounts to the same thing. Some monsters are resistance to certain types of weapon damage, so I'd say rapiers/picks are slightly better, as there seem to be a few more monsters resistant to slashing than to piercing.
If you're fighting monsters immune to critical attacks (undead, elementals, constructs), then it doesn't much matter, the difference from weapon type will usually be minimal.
At higher levels you start to see weapons with special effects that only trigger on criticals, and some of them are instant death effects for certain monsters (Banishing and Smiting weapons). In those cases, the best choice is the one with the widest critical range. I believe that Banishing only comes on bludgeoning and piercing weapons, not on slashing.
