We can bind an item to ourselves by combining it with Khyber Dragonshard Fragments at Stone of Change.

But how can we unbind a bound item?

Not through any method known atm, it would defeat the point of binding in the first place; to prevent circulation of the item.

You can't. That's why before binding at the stone of change, you need to make sure you never want to sell/trade or pass that item onto an alternate toon.
