But seriously, I was killing some spiders while re-doing some old quests to hard/elite, then this thing spawned after I killed one of them. I couldn't target it, and it just stayed there for a little while until it disappeared.

It seems to show up whenever you shatter one with a frost effect.

As far as what it is, I have no clue. It does look like a fine set of internal organs, maybe...

Sometimes they bug out and don't disappear with the outer shell.

Its a cool graphics error that the dev's got lucky in creating. After a spider dies it sometimes happens.

I've seen it only happen with glass spiders (the big ones, not the babies), doesn't matter which weapon I used.

Floating hats from the Sentinels also happens sometimes. It's just a graphics error where only part of the corpse disappears.
