"A new mechanic has been introduced called "double strike." A character with a double strike chance has a chance to make an additional attack roll with their main hand weapon any time they make a main hand attack, on the target of the first attack. Many speed bonuses have been changed to double strike effects."

I dont really understand what does it mean, can someone explain to me what does mean that part "any time they make a main hand attack, on the target of the first attack", what is a target of "first attack" ? Does it mean that doublestrike cant proc another doublestrike ?

Additionally, what does mean "main hand attack" if im two handed fighting ?

Lets say you just have two weapon fighting. That gives you a 10% chance of double strike (a second swing) with your main hand (the weapon in your right hand) and a 40% chance of swinging with your off hand (the left hand weapon) each time you attack.

So you walk up to a monster and swing with your main hand. You get the dice roll, and you hit that monster with your main weapon. There is a 10% chance you will swing again with your main weapon. There is a 40% chance you will swing with your offhand weapon. That is each time you swing (so one attack, and one dice roll). That means you could swing 1-3 times each attack.

Your odds of swinging with your offhand improve with other feats and enhancements, this is just an example. I think you can also improve your double strike chance.
