Barkskin says "Toughens skin of an ally, giving a +2 natural armor bonus to AC with an additional +1 bonus for every 3 caster levels." My question is this, If I were say, 8 Ranger and 12 other class, would my other class levels count as caster levels giving me a total of 20 when lvl20?

No. It only counts Ranger levels.

The caster level applies to how many levels you have in a particular class. So, the barkskin would be cast as a level of 8 if you have 8 levels of ranger, regardless of how many other levels you have in another class.

Kinda figured. Anything that seems like it would make a good build idea turns out to not work. Thanks.

How about the metamagic feat Heighten? Would that make you able to cast it as a lvl 20 ranger even if you're 8 ranger 12 something else?

no, heighten only raises the spell level to make your spells harder to resist, not your caster level
