I have constructed a greensteel great axe and great sword. When I look at my further crafting options I see holy unholy, elemental damage, stat boosts, etc etc.
I am gather I am just missing something.

Everything you need to know about Shroud crafting can be found here:

Sure, it's a very long thread but plod through it and you will learn something very useful!
P.S. Use this planner:

Hint: Hit the Dropdowns first (starting with the Tier 3 Bonus effect) and work backward.

I'm not sure what planner you're using, but try this one here (http://perfectweb.org/ddo/crafting/base_crafting.php).
Go right down to where it says Tier 3 bonus effect and pick mineral II. Then you can see what effects you need to make a min II.

And a falchion would be better than a greatsword to defeat the Pirate King with (unless you are a follower of the lord of the blades perhaps).

OP, also choose yer weapon in the first box, so ya know exactly what yer doing.
Oh and OP, the Pirate King doesn't, and will never, exist. The Pirate King is the ravings from a madman. Ignore the Pirate King comment.
As for the Lord of Blades. Well, I hear Bruno is a less camp version.
