I'm currently playing as a Lawful-Good Cleric level/rank 2-8 and completely forgot to customize my alignment. What alignment is good for clerics, and is there a way to change it in-game without creating another character?

true neutral and no, cant change it for now. you either have to reroll now or lvl to 20 and use true reincarnation (which is a reroll too but you keep your stuff and get a little extra).
as youre just lvl2, a reroll wont hurt that much but beeing lawfull good isnt the end of the world either

I'm one of those RP'ers where if one little thing is off in terms of character building it nags on my mind. Re-rolling sounds like the thing to do right now which I'm not looking forward to. Also I read that certain spells will be available depending on the alignment. Not only do I want to play a support healer but playing little offensively would be fun too.

Neutral good is pretty good if you want to be able to use pure good weapons and will still protect you from alignment weapons and a couple of my clerics are lawful good it lets them do the same(use pure good weapons) and use chaoguard. most clerics wont be able to have a high enough UMD to by pass the alignment restriction

With the creation of shroud items alignment means very little these days...especially on a cleric. Except maybe if you want to multiclass.

it takes some of us awhile to even get to the shroud then much longer to craft said items

the place to change your alignment is under where you type in the name of your character in the last character creation screen.

under where you enter your name usualy
