Well after you have done a quest enough, it is more a matter of time perfection than exploration for the enjoyment, and since you really have no idea the level of experience of the other party members, it is easier to assume and use your invincibility to burn the quest down in 5 minutes than to slink along checking out the sites and snatching up barrels and collectibles.
TIP: New players should say in their LFG, and LFM; Is new player, taking it slow, exploring, still learning, likes to take time.
Folks will respect you, and you will draw like minded players that way, to be truthful the ultra elite quest busters want to group with like minded folks to, but when power leveling their toons they will settle for what ever, so the more info you can put down to describe what you are after, better for everyone!!

Agree and in some cases we are not rushing.. just playing at the speed we are comfortable running these quests. When Amarath first opened we took it slow and did not rush as we did not know the quests. Now we speed run most of these and solo to farm, etc.
Expectations and making sure we are communicating them are essential to a good experience in the game. Starting with the proper LFM statements and then a brief intro to what is expected before the group starts will all help.

How can they do this when all their LFMs and LFGs are done via general chat?

Any LFM in general chat is automatically considered a "n00b" (want to go slow, don't know what we're doing) LFM.

Any LFM in general chat I've joined has been a zerg off in all different directions at max speed group. Self-sufficient characters only!

For me it's visceral. I like to go fast because it's fun. I get very bored dutifully watching a tank break barrels. I'd rather solo than go at a crawl and I'd rather risk wiping than play ultra safe.
An exception is perma-death. I'm looking forward to playing that soon and am perfectly happy to go slow. There's enough risk already that I don't need to rush while learning the game. Once I get used to it I'll probably rush in permadeath too if I can. I used to play Hardcore Diablo 2 and I was very fast there.
Also I think there's a genuine difference between skilled rushing and clueless noob zerging that the anti-zerg crowd fail to appreciate sometimes. Being a healer and watching 5 guys all run off in different directions and get into trouble is just horrible (especially since they usually blame you when they die). Being a healer and playing in a fast competent group is pretty awesome. You perform seat of your pants miracles to keep the group just a whisker away from death time and time again. It's by far my favourite role to play, healing a fast competent group. Healing slow ultra-safe people on the other hand is like watching paint dry.

Let's take that one step further: Any LFM in general chat should be ignored. People who can't take the time to figure out how this game works aren't going to be interested in learning a quest anyway. Newbies putting up proper LFMs will get experienced players to join who are often willing to take it slow to show the newbies the ropes of quest <insert name here>. Even when they don't mention it in the LFM it usually becomes readily apparent when the quest is started. A note about being new to the quest in the LFM is a good idea though.

Another tip: If you want that kind of thing, then don't feel like you need to fill the group to 4-6 players. 2-3 is sufficient for that purpose (and you can throw in a cheap hireling to keep you company)
