I am wondering which of these I should be creating. I'd like to hear from those with experience. Is the crit range on a khopesh good enough? I mean will you get the blind effect fast enough? If you have a Rad rapier in one hand, is that good enough to carry something else in the other?
About me:
Rogue 14/Pal 2/monk 2
STR 24
DEX 28
TWF
ITWF
GTWF
toughness (monk)
PA (monk)
sap
stunning blow
IC: blunt (will swap to either piercing or slashing)
Khopesh

RAPIER!
No question. Blind is on-crit, and khopesh has 33% less crits than a rapier
On my own rogue I carry dual rad2 rapiers. I do not regret the extra 6 large scales it cost to make the offhand one, as I STILL occasional get long stretches of no blindness.

2 rapiers rock.
I also have 2 Rad1 khopeshes on a rog/barbarian crit rage 2. The DPS is sick.
I would definitely take the khopeshes on a STR build and rapiers on a Dex build

Either make 2 rapiers or 2 scimitars. Crit range is the same. If you are an elf its even better. If you go scimitars you can still have crit slashing for kopesh.

I am Warforged. In my current incarnation.
I don't have weapon finesse, even though my dex is a bit higher than my strength.
I don't have scimitar proficiency I think. But that is a great suggestion.

If you have 2 levels of pally which I believe is what u stated in your original post. Then you have scimitar as it is included in the martial proficiency.
Crtis = blindness = sneak attacks = damage So More Crtis = More blindness = More sneak attacks = More damage
Radiance isn't affected by the multiplier; so go with the max crit range weapon so you crit more often and get sneak attacks more often.

Either make 2 rapiers or 2 scimitars.
This is the best way to go. Finesse go Rapiers, Str builds go Scimitar.
