The standard recommended armor seems to be Dragontouched, however I don't have a high enough Dex to take advantage of the extra Max Dex the DT Leather has over my current Mithral Breastplate and would actually lose 2 AC moving to the base DT Leather... Is DT Leather still the best option regardless, or is there something else I should be looking at as an 'ultimate' armor for my character?

that ultimately depends on what your AC is with the breastplate, if said AC is below 70, I'd say go with dragontouched, either robes or the leather.

DT would still be best because of the attributes you are able to ad, if you are worried about AC, there are several things you can add to it such as Protection/Dodge/Insight bonuses, and if the AC isn't an issue (which it shouldn't be if your not hitting around a 60) there are alot of other great attributes.

Out of curiosity, would Icy Rainments be your advice if it was over that?
I don't know exactly what my AC will be in the future... While I tend to plan out my alts to 20, I'm strangely reluctant to do so with my main, hah.

if you can't fill out the max dex in DT leather, probably not, unless its a monk splash.
