Do they fall under the "human" category or elsewhere?

Evil Outsider I'd imagine
was originally assuming that but someone mentioned human per pnp rules so was hoping for a definitive answer.

Their Type is "Outsider", like Devils and Demons.
* Tieflings Subtype is "Native",
Some Tieflings have the Extraplanar Subtype if the were born on another plane and spend the majority of their lives there, but also some dont have this subtype if they were born and lived on the Prime Material Plane (thats where Eberron is).
* Devils have the Subtype "Evil", "Lawful" and "Extraplanar"
* Demons have the Subtypes "Evil", "Chaotic" and "Extraplanar".
Everything that has the "Extraplanar Subtype can be banished with a Banishing weapon or the spell.
Subtypes are also relevant for a Ranger“s Favored Enemy and for bane Weapons. For example FE: Chaotic Outsider will only affect Demons, while FE:Evil Outsider would affect Demons and Devils.
To show how this works on other cretures:
Humans have the "Humanoid" Type and the subtyle "Human", while Elves have the "Humanoid" Type and the Subtype "Elf".

I can confirm that if you have FE: Evil Outsider you will get the extra damage against Tieflings (which makes sense, since Tieflings are outsiders and are evil). I don't know whether they are lawful, chaotic or neutral, so I don't know if chaotic outsider or lawful outsider work as well.
When Tieflings were first introduced they were in fact considered to be humans and greater human bane worked on them, but that was changed to their current outsider status fairly quickly.
