So to my understanding is that concentration modifies how much your minimum ki is but is there something that modifies how much ki you recieve when building up ki or with meditation?

Meditation is tied to your concentration skill also, with a concentration skill of 0 you gain NO KI while meditating. As for building up ki, it's built up by successfully hitting something. Fire, Earth, and (indirectly) Air stances help build up Ki faster (fire increases the amount per hit, earth gives Ki for being hit, air makes you attack faster) Water stance doesn't do anything to help build up ki though.

Also, some of the animal paths you choose at second level adjust your Ki build-up.

Yeah, concentration is a huge skill. From what I remember, your Ki buildup while meditating decreases by x amount for every multiple of your concentration that your Ki builds up to.
So, if your concentration is 5 (con 0, maxed concentration at level 2, when you first get meditation), you'll start by gaining x amount (not sure what the amount is based on - it could also be based on your concentration skill, but that seems unlikely to me; I'll test it out, later), then for every 5 (from your concentration) it increases, your rate of Ki generation decreases by a fair amount. My guess is that the Ki generation is cut in half for each multiple, but I haven't been paying a huge amount of attention, so I don't know off the top of my head.
The way of the tortoise helps, as it gives you a bonus to your concentration skill (as well as extra health), the way of the tenacious badger actually hurts your meditation (in exchange for automatically regenerating Ki while under a certain amount of health)... I think those might be the only ones.
Personally, I always forget to meditate, and I like being a lot more dangerous when low on health ('cause that's when you need it most), so I go the way of the tenacious badger. Besides, that's the way that fits best with Valczir's character, from a role-play perspective, which is important to me.
